I had a Costco size bag of organic spinach in my refrigerator that had gone past the "use by" date and I quickly racked my brain on ways to not let it go to waste. Figured others may be running into the same problems so I wanted to share my tricks.
1. Make egg muffins! Recipe: Pre-heat oven to 350 degrees. Mix together 8 eggs, 1 can of black beans, 1 can of diced tomatoes, 2Tbsp hemp seeds and 2Tbsp flour, 1 cup of cottage cheese and mix well. Then chop up some orange or red pepper, onion and garlic and throw them in a pan, sautéing them with olive oil. Add to egg mixture. Then saute spinach in olive oil until wilted and soft. Remove from pan and wrap in paper towel then chop up and add to egg mixture. Add feta (I added probably ~1/4 cup) or whatever grated cheese you prefer. Then add some sriracha or whatever hot sauce of your choice, to your preferred taste. Put liners in a muffin tin and then add egg mixture until full and bake for about 35 minutes. The nice thing about these are that you can add any veggies that are going bad and really clean out your refrigerator! Win Win! Plus they are SO GOOD.
2. Freeze it for smoothies! Add enough for one smoothie to a freezer bag. OR blend up with almond milk and a dash of O.J. and freeze in an ice cube tray then bag up and add to smoothies to add thickness. (Because if you're like me a smoothie is better the thicker it is)
3. Bed of Greens. Whatever you're making for dinner: steak, chicken or salmon plate the protein source over a bed of spinach.
